‘Christmas’ Cookies

IMG_3796For those of you whom Christmas cannot possibly start until December.. I’m here to tell you it already did, you’d better catch up! Today I have a cooking video to share which is basically a festive twist on a cookie recipe I’ve been using for years. I’m reusing a post from my old cooking blog (which was short lived.. I’m not really a cook) below to explain how I first made these as it just shows how easy they are, the pictures are all from my first attempt too however I will take you through the step by step in the video if you’re interested in WATCHING them being made.

IMG_7385I have never been any good at cookies. I can turn my hand to a wide variety of baked goods but cookies.. not one of them. I’ve always loved the idea of discovering the ultimate “millies cookies” type recipe that actually works and let me tell you… this does! It’s easy peasy to make, no rolling and cutting just delicious soft cookies that you will wow your friends and family.

125g butter, softened
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
200g chocolate chips
easy american cookie recipeCream the sugars, butter and egg.
*I forgot to add vanilla essence and salt but you should add at this point*
*I should mention… they were delicious without these ingredients!*
Add the flour and chocolate chips. I only used about 100g of chopped up Dairy Milk.. it’s all to taste really. I prefer more cookies, less chips. *in this video I used popping candy and ‘smarties’ – you can literally add whatever you want to this base but usually I do use chocolate buttons.*

Split the dough in to walnut sized balls and place on a baking tray. Remember to leave space for the cookies to spread. Bake for around 8 minutes at 180C for the ultimate American cookie experience. They should be soft and chewy on the inside and golden and crisp around the edges. Beautiful!

    Can’t wait to try these …have problems eating certain things (due to having treatment for head and neck cancer ) but think I could really enjoy these dipped in my lovely cup of tea ..I am like you ..prefer more cookie than chips lol ..thank you for sharing x

      Oh Gosh, if these are all you can eat through your treatment hopefully they will make it slightly less awful xx

    These look delicious! I’m sure the smell of freshly baked cookies will get me feeling all festive and I love the idea of green and red coated chocolate chips to make them extra Christmassy! These really do look surprisingly easy to make so I don’t really have an excuse not to give them a go! 🙂
