This is a recipe I’ve adapted from a Nigella Lawson cookbook. That called for butter and soft brown sugar, I substituted that with Nutella. Now I myself don’t like peanut butter but I am told (by EVRYONE who has tried them) that these are very yummy indeed and since they need no cooking they are super easy and great to make with kids.
Ingredients – Icing Sugar / Nutella / Peanut Butter (I use the crunchy but you could go with smooth) and chocolate (again down to preference) for the topping. I iced these for Halloween but you can use them for any occasion and decorate (or not) as you wish.
The volume of each ingredient is down to you, I use a big tub of peanut butter, half a tub of Nutella, maybe a 2 oz of icing sugar and mix them together until they’re the consistency of playdough. They roll them up in to balls and press in to (foil – they hold up better) cupcake cases. From there all that’s left to do is melt your chocolate and pour on top. I can make around 12 with this amount but you could also put them in to smaller cases and make lots of minis. The reason I’ve taken to making the giant version is because those smaller foil cases are difficult to find and I never leave enough time to order online but I’m told they make for nice bite size treats.
