Lazy Girls.. Burritos


 This is one of my favourite meals and possibly the one I miss most since I’ve been attempting to cut calories but it’s just so easy and delicious that I will definitely be breaking it out again in the colder weather. This will make enough for 4 large burritos and we have 1 each.. they’re really filling but that’s just a guide because obviously everyone’s portions are different.

*What You’ll Need*

A big pack of mince (you could use turkey if you’re calorie conscious) / I use a packet of chilli spice mix but it’s not that difficult to make your own.. this is just quick. You may also want onions, pepper etc but we like it simple. / Kidney Beans / Passata or Chopped Tomatoes / Rice – we like this mexican style rice from Uncle Ben but again use whatever you like. / Tortilla Wraps / Soured Cream, Guacamole and Cheese as a ‘topping’



For the chilli add your passata and kidney beans to your browned minced and cook for 10 minutes before stirring in your rice.. the one I use is a 2 minute microwaveable deal but if you were using uncooked rice you’d obviously have to adjust cooking times accordingly.


 It’s seriously quick and easy, rice/chilli mix goes in the wrap and you ‘garnish’ your plate with the toppings you prefer. My husband has just cheese and I draw the line at salsa but it’s all down to taste and it’s delicious!


 You can even shallow fry the wraps to make chimichangas or bake them in a cheese sauce for enchiladas.. all yummy, even Milo likes them!


This is not the healthiest way to cook this recipe.. generally the more raw ingredients the better but I love me a lazy recipe and this is so tasty I wanted to share it with you, it will soon be time for those winter warmer dinners and this is a great one!

    I Love burritos and every friday night is burrito night in our house.

    For guacamole using a fresh avacado is a must for me, just mash it up with a fork with a bit of sweet chilli sauce in, nothing else. Try it, it is so much nicer than any shop bought and super easy!

    I do generally try to cook somewhat healthy… but these quick, easy, and delish recipes are so nice to have in my back pocket for days when I just don’t want to cook, dangit! 🙂 Thanks so much for sharing your lazy day recipe! Looks tasty!
