I shared these on my vlog channel a couple of weeks ago and they went down well so I though those of you who prefer to read might be interested in them over here. They have been my go to side dish since starting slimming world and they’re super easy and syn free too. For those of you not following the plan they’re really delicious and just a healthier alternative to chips, even my kids (including the fussiest 8 year old that ever lived) will eat them so I encourage you all to give them a go.
In a nutshell I chop up new potatoes to bite size chunks, spray a baking tray with fry light (you can use another oil if you’d prefer) and spread the chunks evenly over it. I add salt and pepper (sometimes paprika) and mix them up to get an even covering. I spray a little more fry light over the top and put them in the oven at 200 for 20mins. They are nicer if you mix them up halfway through as you get a more even, crisper potato but you really don’t have to if you can’t be bothered (aka: me)

Now on to the update, I said I’d do them occasionally and I’ve just hit a pretty big milestone so it seemed like a good time. I’m not looking to lose a huge amount of weight but I do have a goal in mind and a few landmarks to aim for along the way and the first was to be the lowest weight since I had Milo. This week I hit that. I’m still a few lbs away from my pre-Milo weight but I’m now the lightest I’ve been since I had him and that’s a pretty big deal too. I dieted heavily before our honeymoon a couple of years ago and lost a chunk then but pizza and junk food put it all back on. That time exercise had a big impact whereas this time around I’ve done little to nothing so I don’t need to worry about putting on weight if I don’t stay active.. it’s just the plan that’s enabled me to lose it this time around which I feel good about. I do want to tone up but I’ve decided against intensive cardio because I can’t keep it up.
I’m not following the plan to the letter, I’m still treating myself at the weekend and having my syns, not always having my healthy extras etc or all the veg I should but my diet is 100% healthier than it once was, I’m cooking every day and I’m really enjoying it. It’s more expensive to do my food shop now I’m buying so much fresh meat and vegetables but I’m excited to get to the supermarket and plan meals now. The only negative I’m still struggling with is that I’m cooking almost totally separate meals for me and the family. When it comes to food my husband is my third child.. in fact the littlest one is more likely to eat what do that Lee or Ella but I’m trying to substitute my healthy side with something they’ll eat so they’re not constantly eating out of the freezer and (keep this quiet) I’ve been sneaking vegetables in to as many meals as I can hide them in 😉
If like me you like to have on the go snacks and quick meals in for those moments of laziness my favourites have been Mug Shots, and Ryvita Minis. Sweet stuff wise I usually stick to ginger biscuits (2 syns each) and time outs (single finger bars are 4 syns each) otherwise I fill up on satsumas between means to get that sweet snack hit and help get in my third superfree (fruit/veg) quota for the day.

PS.. remember those ‘before’ pictures I took at Christmas time? I’m thinking if I get back to my pre-Milo shape I will do some afters to compare.. would be interesting to see the difference cause it’s difficult to tell when the loss is so gradual.
