Cheats Chicken Noodle Soup

OLYMPUS DIGITAL CAMERAI've been making this for a few weeks now and having shown it in vlogs and had a few requests for the recipe.. here we are! It's delicious and super filling plus it feels homemade without any of the annoying prep work..

Step 1. Melt some butter in a pan (I have no measurements and I don't think they really matter, play it by eye) and cook your diced vegetables in it until they soften. I usually use onions, leeks and carrots but I picked up this soup medley which also had swede and potato and everything was perfectly uniform - very nice and even EASIER!

Step 2. Add in some flour.. this is why it's important that you cook the veg in butter and not oil (or fry light - tempting as it might be, slimmers!) because the flour creates a roux which will (hopefully) thicken up the stock later on. I don't like it TOO thick but this will be trial and error, add more butter/flour for a thicker, creamier soup..

Step 3. The stock. Now if you're a cheat (like me) I'd recommend the Knorr Chicken Stock Pots.. they dissolve quickly and are really yummy but you can obviously make your own stock (takes FOREVER) or use your own favourite substitute. I dissolve 2 into a big bowl of water (again, no measurements but must be at LEAST 2 pint - I'm guessing) and after cooking the veg with the flour for 5 minutes I add in the stock and seasoning (salt and pepper)

Step 4. I cook that for 10 minutes and add in my noodles and shredded chicken.. I usually make this when I have left over chicken from a roast for a few reasons, mainly the shredded chicken off the bone is easier/nicer to eat in soup but if you only have chicken breast you can make it work. I have tried a few different noodles, the Bare Naked ones are good but after trying the Amoy Ribbon noodles I'm definitely converted.. they're better in soup!

Step 5. I cook again for another 5 just to warm the chicken and the noodles through and then serve. It's really easy, feels homemade (I mean, it is to a degree but there's much cheating to be had if you want to save time) and you can adjust the recipe to your own taste entirely. You can add different vegetables, different stock, even take out the chicken altogether and make it vegetarian.. really yummy. If you want to see the recipe in action, here's the video.
